{"id":5234,"date":"2016-05-02T15:19:55","date_gmt":"2016-05-02T15:19:55","guid":{"rendered":"https:\/\/fomal.org\/home\/?p=1754"},"modified":"2016-05-02T15:19:55","modified_gmt":"2016-05-02T15:19:55","slug":"concorso-chef-to-chef-2016","status":"publish","type":"post","link":"https:\/\/www.fomal.org\/main\/concorso-chef-to-chef-2016\/","title":{"rendered":"Concorso CHEF TO CHEF 2016"},"content":{"rendered":"<p>Matteo Todisco, studente della III D del Fomal, ha partecipato luned\u00ec 18 Aprile 2016 al concorso <a href=\"http:\/\/www.cheftochef.eu\/\" target=\"_blank\" rel=\"noopener\"><span style=\"text-decoration: underline;\"><strong>Chef to Chef<\/strong><\/span><\/a>\u00a0 presso l\u2019Antica Corte Pallavicina, struttura in cui ha inoltre svolto l\u2019ultimo stage del percorso formativo.<\/p>\n<p>La Corte, situata sull\u2019argine del Po nella localit\u00e0 di Polesine Parmense (PR), \u00e8 il risultato di una serie di ristrutturazioni, l\u2019ultima delle quali a partire dal 1990 quando fu acquistata dalla famiglia Spigaroli. E\u2019 tuttora presente lo stemma della famiglia Pallavicina e un\u2019antica stufa risalente agli anni Sessanta domina lo spazio centrale della sala.<\/p>\n<p>E\u2019 questo il contesto in cui <strong>Matteo Todisco<\/strong> ha presentato, in squadra con Luca Zvaleni dell\u2019Istituto Alberghiero di Comacchio e Andrea Zagni dell\u2019Istituto Agrario di Ferrara, i <strong>Tortelli di erbette alla Parmigiana abbinati al Rosso del Motto<\/strong>, piatto della tradizione parmense, perfetto connubio tra passato presente e futuro.
